What You Need

6 bone-in chicken thighs

kosher salt

ground black pepper

1 tbsp vegetable oil

2 inch piece ginger, grated

5 cloves garlic, grated

8 oz small shallots

3/4 cup dry white wine (or sake)

1 cup low sodium soy sauce

3/4 cup water

1/4 cup granulated sugar

1 tbsp toasted sesame oil

toasted sesame seeds

thinly sliced green onions

white rice, for serving

What To Do

Preheat the oven to 425 degrees Fahrenheit. In a large ovenproof skillet, heat the soil. In the meantime, season the chicken with salt and pepper. Once the oil is hot, add the chicken onto the skillet skin side down and cook until the skin is deeply golden, which will take about 6 minutes. Once finished, transfer to a plate.

Add the garlic, ginger, and shallots to the skillet and cook for about one minute. Add the wine and reduce it to half, about 3 minutes. Add the soy sauce, water, and sugar and then bring to a boil.

Place the chicken skin side up in the skillet, nestling it between the shallots. Transfer the skillet onto the middle rack of the oven and let the chicken braise uncovered for 35 minutes, until they are fully cooked through. Once finished, remove from the pan.

Place the skillet pack on high heat and cook until the sauce has completely thickened, about 3 minutes. Pour the sauce and sesame oil all over the chicken thighs.

Garnish with sesame seeds and green onions and serve alongside rice. Enjoy!
